I am confused with Czech model prefixes of “CZ” vs “VZ”. What have I missed or not picked up on? When / why is one used vs the other?

As already mentioned, VZ is short for vzor (model), so vz 27 is the original terminology. The term CZ27 actually didn’t come into use until post‑WWII, and it is commonly used to refer to all Model 27s today.
